A question we could not shake.
White Cow Organics began with a question we could not shake: why has it become so hard to find real milk and pure ghee, even in a region surrounded by dairy country?
Growing up around Dehradun, we watched the dairy market shift - milk collected in bulk, processed at scale, and turned into products where speed mattered more than tradition. Milk got diluted, standardised, and stripped of its character on its way to becoming “packaged.” And along with it, the Bilona method - the slow, deliberate process passed down through generations for making ghee - was being replaced by faster, cheaper, industrial alternatives.
We did not think that trade-off was necessary. So we set out to build a small-batch dairy processing unit rooted in the Doon valley, delivering milk as close to its natural state as possible, and using traditional methods for everything else - even if that means producing less, more slowly.
